Step into the heart of the Itria Valley, a region known for its ancient culture of Burrata cheese and enchanting “Trulli,” iconic conical-roofed homes crafted from overlapped dried limestone. You’ll meet your driver and depart for a traditional farmhouse where you will learn about the ancient culture of Burrata, a delicious fresh cheese, an icon of Apulian gastronomy. The lesson concludes with an authentic lunch comprised of a sampling of local fresh and aged cheeses and cured meats, vegetables from the garden, crispy friselle, bread and taralli, followed by a first course of orecchiette pasta with fresh tomato sauce flavoured with basil and a sprinkling of cacioricotta cheese. The menu also includes a second course, typically proposed by the chef with meat (vegetarian proposals on request), dessert with almond pastries, coffee and a choice of house wine (red, white, rosé), and water are included.
